疫情期间,封闭在家吃的清汤寡水。这两天终于获得半自由,想吃一些硬菜,只可惜饭店都还没营业,只好自己动手。
今天想吃酱牛肉了,没说的,撸起袖子干!
选牛腱子肉2斤,清水浸泡2小时,去除肉中的血水。
洗净放入盆中,加入豆瓣酱、甜面酱、生抽、酱油、耗油、料酒抓拌均匀,盖上保鲜膜腌制3小时。
准备花椒、八角、桂皮、冰糖、葱段、姜片、干辣椒、食盐若干。
腌制好的牛肉放入高压锅(为了节省时间),加入准备好的调味品,加水没过牛肉。开大火烧开,转小火炖40分钟。
静置冷却后,捞出切盘食用。
